Antioxidant activity of compounds can therefore have applications in health or cosmetology as well as in the food industry.
The antioxidant action of compounds or extracts is evaluated by two tests: the ABTS test, (the antioxidant power of the compounds is measured in the absence of cells using a chromogenic molecule, ABTS), and the antioxidant power assay on culture cells (cell cultures are subjected to UV or oxidative stress, then the antioxidant action is measured).
